Hi, friends! I’m coming to you today with a good old fashioned weekend recap. We lucked out with Rich off work for three weekends in a row. This weekend was absolute perfection. I had to share!
Our weekend kicked off with an energetic Trolls dance party. Then Rich put B to bed while I made a dinner. I had Fussili Alla Vodka on my “to make” list for month and it was so worth the wait! I sautéed some shrimp to add some protein and it was perfect.
After eating dinner we made our way to our family room for a movie night. We watched Get Out and were on the edge of our seats. I’m not usually a horror movie fan, but I really enjoyed it. I immediately understood why it got such fantastic reviews!
Saturday started bright and early. Rich got up with B (keeper!) and I woke up with just enough time for a snack and coffee before heading to my favorite strength class at the gym while a Rich did his own workout at home. My class is similar to Body Pump and each track kicked my butt! I was a little relieved when I had to duck out for a diaper change in the middle of the triceps track. Afterwards we had our usual snack break (a smoothie split in two and Pirate’s Booty) and made a quick stop at Trader Joe’s on the way home for a few things I forgot during my Friday lunch time grocery run.
When we got home from the gym, Rich went out for a haircut and I fed B lunch. While he was eating I got a burst of energy and did our weekly meal prep. I hard boiled some eggs, made batter for Paleo Blender Muffins and assembled Slow Cooker Jalapeno Popper Chicken Chili for Super Bowl Sunday. Finally I put B down for his nap and hopped in the shower.
That evening we had a date night planned in Chicago, so I made an appointment for a blow out. I headed out as soon as Rich got home and made it back to give him time before our babysitter arrived.
Months ago I made a reservation at Bellemore and it did not disappoint! The vibe was so cool and we enjoyed a tasting menu featuring all of the highlights of their winter menu. We made it home quickly despite heavy snowfall and I was happily in bed by 10:00!
We started our Sunday morning slowly. I threw the chili I had prepped into our slow cooker and popped the muffins in the oven. We enjoyed them warm with coffee as we watched Boss Baby for the umpteenth time.
Finally, we got ready and went to the 10:45 family mass at our church. It is a more laid back mass with shorter readings and opportunities for the kids to come up to help play music and for the homily. It makes for a much more enjoyable experience than the back and forth of regular mass and we enjoyed it. Afterwards we were ready for another coffee. We stopped for almond milk lattes, which we drank in peace thanks to a window seat by the train tracks. B happily kept watch while we sipped our lattes.
The snow accumulated overnight and with time to kill before nap time, we bundled up and played in the untouched snow in our front yard. At one point I asked Rich if we had an Amazon box that would fit me and we did, which allowed B and I to sled down the side of our yard. Not surprisingly, he loved it and made me go a few times before he was ready to head inside to warm up.
A busy morning led to a great nap and both B and Rich slept for almost three hours! I fought the urge to get stuff done during nap, and instead settled in by our fireplace and read the entire time. It was glorious!
When B woke up, I gave him a snack. While he watched Thomas and Friends, I spent a few minutes prepping for the week. I put away laundry, laid out clothes for Monday and packed up B’s winter wear for school.
Once we were ready for the week, we cuddled up on the couch to watch a few minutes of the Super Bowl coverage as a family. Eventually we went upstairs to eat our chili, give B a bath and then went back downstairs to watch the half time show. We let B stay up past bedtime and I have to say it was worth it for his little booty shaking alone!
After putting B down, Rich went straight to bed and I watched This is Us while I wrote this post. I had to work to stay up, but it was worth it- such a good episode!
