Ten Whole30 Dinners for Busy Weeknights

Since completing Whole30, we’ve been working to find a balance. One thing that’s working for us is to make compliant meals most nights of the week at home. Today I thought I would round up ten of our favorite Whole30 dinner ideas for busy weeknights.

We were happy to realize that one of our all-time favorite weeknight meals was compliant. Typically we would serve this recipe with rice pilaf, but instead I added some Cauliflower to the pan to make the dish a bit more starchy and it turned out amazingly. This is a great recipe to prep ahead so that you can pop it into the oven quickly on a busy weeknight.

This is our absolute favorite Whole30 compliant dinner. This recipe is one that we tried during week one of our challenge and we’ve made it almost every week since. The savory and sweet flavor of the green curry and coconut milk is super satisfying and it’s easy enough to make on any night of the week.

Whole30 Garlic Lime Pork Chops

Quick Garlic-Lime Pork Chops With Cilantro Lime Cauliflower Rice

If it appears that Cauliflower has become a staple in our household, then I guess it’s true! This combo is one of those easy and quick meals that you turn to time and time again. I can get this meal to the table in twenty minutes and it always hits the spot, so it’s a win in our book.

I promise you won’t miss the tortillas in these flavorful lettuce wraps. This is another recipe that gets to the table in approximately 20 minutes. I serve mine with store-bought guacamole and salsa to make it even easier.

While we’re still on the subject of grilling, another one of our go-to grilled meals are these Rosemary Lamb Chops. We made these often prior to Whole30 and tend to make them anytime Lamb is on sale. We like to serve them with roasted asparagus done in foil alongside on the grill. Easy, healthy and delicious!

Whole30 Buffalo Wings with Roasted Carrots

We are crazy for anything Buffalo flavored and were happy to find a recipe that was compliant while on Whole30 to make for the Super Bowl. I love the combination of these baked wings alongside roasted carrots that you can roast at the same temperature for an easy meal. Topped with compliant ranch (Primal Kitchen or Tessamae’s) and you’re good to go!

Just add Cauliflower Rice and you’ve got an amazing meal with this Slow Cooker Picadillo recipe. This savory meal is not one to be missed.

Whole30 Salmon Recipe

Salmon with Brown Butter and Almonds With Green Beans

This is another example of an old favorite made compliant. If you swap out Ghee for Butter in this recipe you’ve got an easy dinner that’s perfect for weeknights or for hosting guests. In the past we would serve this salmon with rice pilaf, but you could double your green bean serving for a satisfying meal.

One Pot Spaghetti Squash and Meat Sauce

If you’re low on time and do not want to do many dishes, this recipe is for you. Typically we add the cheese rind for flavor, but while on Whole30 I added a splash of Balsamic Vinegar to give this recipe some depth. It also works well with sliced mushrooms added to bulk it up a bit.

Chipotle Salad with Carnitas, Salsa and Guacamole

Last but not least for those extremely busy days when you’re just not able to cook, Chipotle to the rescue! You can order one really solid meal- A salad with carnitas, pico de gallo, hot salsa, mild salsa and guacamole. We lucked out and got three BOGO coupons which brought us through the challenge and then some.

If you’ve completed Whole30, or if you just you’re just trying to eat better I would love to hear your favorite weeknight meals! Also, if you’re up for the challenge this could serve as a great starting point for you. If you eat the dinner leftovers for lunch the next day, stock up on snacks and prep and egg bake for the week, you’ll be good to go for your first ten days!
