Over the past few weeks, everything was ready for baby and I had nothing left to prepare so I shifted my focus to food. Rich and I tend to get crabby when we’re tired and hungry, so I tried my best to prevent at least one of these things from happening since I know we’ll be exhausted!
I did one big freezer meal session when I was 37 weeks pregnant and I would not recommend it to anyone. I would suggest splitting my round one into two sessions instead since I was swollen and exhausted afterwards, because when I still wanted to do more so round two was split into a few mini sessions and making double batches of meals the last few weeks before my due date and this was totally doable. It also gave me something to focus on instead of counting down to my due date!
After my freezer meals were prepared, I went on a stock-up trip at Mariano’s and Trader Joe’s to fill our fridge and freezer with any sides and extras needed for each meal and any basics I wanted to have on hand. The plan is for us to only need a few things here and there throughout the first month at home, so we’ll see how it goes!
Frozen Breakfast Burritos
Freezer Steel Cut Oatmeal
Green Monster Smoothies
Zucchini Chocolate Chip Muffins
Cereal with Almond Milk
Kodiak Cakes and Bacon (probably on the weekends for a treat)
Chicken Enchiladas with Sour Cream White Sauce
Chicken Pot Pie
Stovetop One Dish Chicken Bake to be served with green beans
Mini BBQ Cheddar Meatloaves to be served with broccoli
Slow Cooker Pulled Pork to be served on pretzel rolls with sweet potato fries
Turkey Taco Meat to be served as nachos with beer, can’t wait! 🙂
Crockpot Beef and Broccoli to be served with brown rice
Super Easy Ravioli Lasagna to be served with Texas Toast
Skillet Tater Tot Casserole to be served with broccoli
Powder Keg Chili to be served with plain Greek yogurt, cheddar cheese and oyster crackers
Chicken Tikka Masala to be served with peas, brown rice and frozen naan
My plan for the first two weeks is just to go into survival mode and use what we have on hand for meals. Rich will return to work after that and I would like to start establishing a routine. I’m hoping that I’ll have the urge to cook on Sundays and then we can use our freezer meals for Monday, Wednesday and Friday and rely on leftovers for Tuesday and Thursdays.
After month one my goal is to start meal planning again and slowly getting back into the habit of us cooking before I return to work at 13 weeks. Wish us luck and hold me accountable to bring back my meal planning posts in four weeks!
