As we get closer and closer to my due date (I’m 37 weeks today!), I am still feeling the urge to get as prepared as possible. One of the things at the top of my list is meal prep- Mama’s gotta eat!
Yesterday I spent the afternoon in the kitchen making a round of freezer meals. If I have the energy and time to do another round or two before the baby arrives I’m going to go for it, but for now I’m resting up after a whirlwind day!
When choosing recipes, I wanted to choose meals that could be prepped and frozen and then finished up in the oven or Crockpot. I’m not a huge fan of leftovers or meals that are fully prepared and frozen, so I’m hoping these will work out well.
Also, as you can see these meals are all comfort food. I have a feeling we will be thankful for this when we’re scrambling to get food on the table the first few weeks at home with baby!
Here’s What I Made:
Two Batches Cake Batter Chocolate Chip Cookies, froze unbaked (one for us and one for the nurses at the hospital)
One Pan of Chicken Enchiladas with Sour Cream White Sauce (assembled up until the point of baking)
One Pan Chicken Pot Pie (assembled up until the point of baking)
One Batch Chicken Spaghetti (assembled up until the point of baking)
One Batch Stovetop One Dish Chicken Bake (assembled up until the point of baking)
One Batch Mini BBQ Cheddar Meatloaves (froze raw to be baked from frozen)
One Batch Slow Cooker Pulled Pork (froze raw to be thrown in Crockpot)
I think that this will give us six very large dinners, leftovers for lunch and enough breakfast to get us through the first two weeks or so.
Ideally, next weekend I would like to do another round of meals and make six more dinners, another breakfast item (I’m thinking Frozen Steel-Cut Oatmeal) and a batch of Lactation Cookies to get us through the first month at home.
Also I plan on doing a last minute stock up of essentials when I get to 39 weeks and have a list ready for my Dad to run to the store when he’s here if I go into labor early. We may be overwhelmed, exhausted and feel like our world has been turned upside down when this baby arrives, but at least we won’t go hungry!
