No Plans Weekend & Meal Plan 1/25-2/1

Good Afternoon!

One habit I got into last year was to leave one weekend per month completely open and I’ve been diligent to continue this into the new year. This weekend we went into the weekend with no plans and it ended up being the most fabulous, productive and energizing weekend!

On Friday night, Rich and I met after work for a BBQ dinner and American Sniper. We rarely go to the movies, but it was an nice treat and fun to meet up after work rather than leave the house together.

Yesterday was a relaxing and productive day. We slept in, made pancakes and I fit in a quick at home strength workout before running the few errands. I treated myself to a few new things at the mall, checked out a big stack of books at the library, stocked up on groceries and then came home to relax for the rest of the day. We watched Spinning Plates on Netflix and are now obsessed with eating at Alinea in the near future.

Today started in my most favorite way possible, with a yoga and breakfast date with my friend Denise. I came home and spent the afternoon doing this week’s food prep, finishing up my Sunday things and took Penny on a decent walk. Now I’m off to soak up the last few hours of the weekend relaxing!

If you’re an over planner like me, I highly recommend a no plans weekend every once in awhile! This weekend has been exactly what I needed and I feel great going into the work week.

Now, here’s my meal plan for the week:

Breakfast

Making a large batch of freezer breakfast burritos

Lunch:
Leftovers

Snacks:
Nuts or Cheese and Fruit or Trail Mix (the usual)

Dinner:
Sunday-Slow Cooker Chicken Tikka Masala, Peas, Rice and Naan
Monday-Leftovers
Tuesday-Vegetarian Baked Taquitos (never made these last week)
Wednesday- Chili Garlic Beef Stir Fry with Jasmine Coconut Rice (also never made this last week)
Thursday-Buffalo Chicken Sausage Sandwiches with Sweet Potato Fries
Friday-Hosting Book Club at our place (I think I may do a salad bar)
Saturday-Restaurant Week meal at Ada St.

Meal Prep:
Make Breakfast Burritos
Make Sunday Night Dinner
