Meal Plan 1/18-1/23

Good Morning!

This weekend I took a quick trip to Michigan for a photo shoot with my wedding photographer to knock one of my 30 Before 30 items off my list.

It seems that when I go back home all I do is talk and eat, but I wouldn’t have it any other way. Last night Rich, my Dad and I had a delicious dinner at Zingerman’s Roadhouse and this morning I caught up with my dear friend Layne who was in town from DC at our hometown favorite breakfast spot Rebecca’s. Bottomless coffee and endless girl chat is my favorite way to start Sunday morning. We stayed until the glares of people waiting for tables was too much to handle.

This week is the first week since before the holidays that we’re back to our “normal” schedule and I’m looking forward to cooking meals at home. Let’s hope that me mentioning that I’m excited to return to my normal eating and workout schedule is enough to hold me accountable-so here we go!

Here’s my meal plan for the week:

Breakfast:
Broccoli Cheddar Strata Cups or Kodiak Cakes

Lunch:
Leftovers

Snacks:
Nuts or Cheese and Fruit or Trail Mix (the usual)

Dinner:
Sunday-Leftover mini burgers from my dinner last night and side salads
Monday-Slow Cooker Chicken Carnitas with Black Beans and Brown Rice
Tuesday-Bangin’ Good Chicken Salad
Wednesday-Crock Pot Meatballs with Whole Wheat Spaghetti
Thursday-Vegetarian Baked Taquitos
Friday-Chili Garlic Beef Stir Fry with Coconut Jasmine Rice
Saturday-Out with our friends Liz and Jason

Meal Prep:
Make Broccoli Cheddar Strata Cups
Make Sunday Night Dinner
Assemble Crock Pot meal for Monday

  1. I just made my meal plan for this week and am trying the Bangin’ Good Chicken Salad too– looks so good!
