Let the Thanksgiving prep begin!
I’m back from Vegas! It was a whirlwind trip. My days were filled with back-to-back and sometimes double booked meetings and the days flew by.
At night I was able to fit in some fun as well! I had three fun dinners (I ate at STK, Julian Serrano & Javier’s), happy hours (got to check out The Cosmopolitan’s Chandelier Bar), saw Matt Nathanson play at our customer appreciation party and ended the trip doing Japanese Karaoke with coworkers in Chinatown.
The plane ride home was rough and I appreciated the 16 hours of sleep I got when I returned home on Friday night.
This weekend I recouped and caught up on life- tackled my inboxes, laundry, budget, planned for Thanksgiving and caught up on rest. Today I’m taking relaxation seriously so that I feel rested for the week ahead!
I’m looking forward to a low key week. I am in need of some homemade cooking, some good workouts, lots of rest and organizing. I’m excited to host our second Thanksgiving and to Turkey Trot that morning!
Here’s my meal plan for the week!
Eggs and Chicken Sausage & Yogurt (on a huge kick here…)
Apples & Cheese and Banana & Peanut Butter (kick is still happening here too…)
Sunday-Crock Pot Peanut Thai Chicken with Brown Rice
Monday-Beef Stir Fry with Brown Rice
Tuesday-Vegetarian Tacos with Goat Cheese
Wednesday-Out with my Dad
Thursday-Thanksgiving! (Menu to come later this week!)
Friday-Leftovers with Pan-Fried Brussels Sprouts with Cranberries, Walnuts & Blue Cheese
Saturday-Leftovers with Sweet-Roasted Rosemary Acorn Squash Wedges
Make Sunday Night Dinner with extra Brown Rice
