This weekend was truly a weekend of foodie fun!
It kicked off with
book food club on Friday night. We read The Night Circus and as always we excelled at each bringing a themed dish. My addition was caramel apples!
Saturday is typically errand day and yesterday was no different. I spent the afternoon doing my food prep for the week and making Roasted Butternut Squash Penne to bring to our friends’ sixth annual pulled pork cook off. It was a night of good food, good friends, good beer and a bonfire. What else do you need?
Now for this week’s meal plan….
Eggs and Yogurt (I’m on a major kick here- I eat my eggs before I get ready for work and my yogurt when I get to work)
Fall Harvest Quinoa Soup or Leftovers
Apples and String Cheese as my mid morning snack and Peanut Butter and Banana for my pre-workout afternoon snack (on a kick here too)
Sunday-Hosting a blogger cooking class at Whole Foods Northbrook!
Monday-Broccoli Cheddar Quinoa Casserole
Tuesday-Grilled Chicken & Spinach Quesadillas
Thursday-Happy Hour with my friend Denise at Wildfire
Saturday-Out somewhere before watching Rugby at Soldier Field
Make Monday night dinner
Make Shredded Chicken for Tuesday’s dinner
