Time for another recipe round-up! Here are some new recipes I’ve tried and loved lately.
Last week I made this Smoked Salmon Vegetable Egg Casserole. It was an easy heat and eat breakfast to have on hand during the week and it felt super decadent to eat smoked salmon during on weekdays. I’m also really proud of this Mexican Omelette Egg Muffins recipe- check it out!
A few weeks ago I paired two Skinnytaste recipes together- these Asian Turkey Meatballs and these Zucchini Tots. It was the best dinner- I loved the recipe for the sauce that went with the meatballs and I dipped the tots in a little Wasabi Mayonnaise from Trader Joe’s. It was delicious!
After our great experience trying Peruvian food for the first time at Tanta, I was excited when this Lomo Saltado recipe was posted on Skinnytaste. Rich and I made it a few weeks ago for Sunday night dinner and it was a great recipe to make together and we loved the unique taste of the sauce and crispy potatoes that get thrown in the stir-fry at the last minute!
This past Sunday we made this Ricotta Gnocchi recipe. It was such a treat! I highly recommend it for a fun date night in- top with fresh Basil for a great meal!
As far as weeknight meals- this One Pot Chicken Burrito Bowl recipe made for the perfect meal. It was allllmost good at Chipolte and great leftover for lunch.
These Crock Pot Maple Dijon Pork Chops were amazing to have ready to eat on a recent Monday night. Crockpot meals are especially great on Mondays, in my opinion!
One last weeknight meal we made recently was this Shrimp and Garlic with Chickpeas. We served it with garlic bread which we dipped in the garlicky broth- yum!
