Today is a special day for a few reasons. First and foremost, it’s my husband Rich’s Birthday! We celebrated with his parents last night over burgers and beer and Saturday night we have a date night planned. Today though he’s being super patient as I have Espirt de She to run tonight!
It’s also National Tequila Day! Did you know that!? Me either, until the folks at Casa Noble reached out to me to see if I would be interested in creating a recipe for them to celebrate the holiday. Of course I could not pass up the opportunity and said yes!
This recipe is a boozy spin on a classic granita. It’s quick, easy and mostly hands-off which makes it perfect for Summer entertaining. It can also be served with our without the booze, which makes it a great option for whoever you’re serving.
You Will Need:
8 cups cubed seedless watermelon
1/3 cup sugar
Juice of 2 limes
Zest of 2 limes
About 1/2 shot Casa Noble Tequila
1/2 shot Triple Sec
1. Add the first four ingredients to a blender, blend until smooth.
2. Pour into a 9×13 square metal plan and freeze for an hour. Scrape the granita with a fork to loosen it up after one hour and then put the pan back in the freezer. Repeat four more times until the granita has been freezing for four hours and is a chunky slush consistency.
3. Scrape into small ramekins, rocks glasses or margarita glasses to serve.
4. Top with about 1/2 ounce tequila and triple sec or more or less depending on how committed you are to celebrating national tequila day.
5. Stir and Enjoy!
