Meal Plan 7/13-2/20

Good Morning!

This weekend has been a busy and fun weekend! My Aunt Carol was in visiting and Friday we took her to Green Street Smoked Meats. I loved it and the food was worth the wait- I’ll be sharing more about that tomorrow. Last night, we went to Ravinia to see Allison Kraus and Willie Nelson. As always, the people watching was the best part of the show and we had a blast relaxing on the lawn with a picnic.

This week’s meal plan is filled with weeknight favorites and a few new recipes that look delicious and easy. (like this Blueberry Smoothie, it fit both requirements) It’s going to be a trial and error for awhile while we find our groove, but I’m excited to be back to a regular routine!

Here’s this week’s meal plan:

Breakfast
Blueberry Muffin Smoothies (with spinach added) or Freezer Breakfast Burritos (I made a big batch yesterday)

Lunch
Leftovers, sandwiches or this chickpea salad

Snacks
Watermelon, Apples, String Cheese, Greek Yogurt or Almonds

Dinner
Sunday-Going over to my Aunt & Uncle’s for pool time and dinner
Monday-Pesto Chicken & Summer Squash Skewers and rice pilaf
Tuesday-Easy Roasted Chickpea Tacos
Wednesday-Soy Dijon Pork Tenderloin with sweet potatoes and a salad
Thursday-Cheeseburger Salads
Friday- Pizza at our monthly church marriage group meeting
Saturday- Wing it/Out

Food Prep
-Make a batch of breakfast burritos
-Cut up watermelon

  1. I love rice pilaf and so rarely see it on others menus, I find that it makes one cup of rice go much further!

  2. Yum!! Looks like a healthy & delicious week you have planned! We didn’t eat healthy at all this weekend at a family reunion so I’m hoping this week can get us back on track!

    Making breakfast burritos ahead of time sounds like such a great idea. I love that! I also always have to write out or remind myself what food prep needs to be done or I’ll never eat it. Gotta go cut up my cantelope now!

    • Same here! If I wouldn’t have cut up my watermelon today it would sit there all week. And I love making breakfast burritos, it takes 45 minutes to make 20!
