This weekend has been a busy and fun weekend! My Aunt Carol was in visiting and Friday we took her to Green Street Smoked Meats. I loved it and the food was worth the wait- I’ll be sharing more about that tomorrow. Last night, we went to Ravinia to see Allison Kraus and Willie Nelson. As always, the people watching was the best part of the show and we had a blast relaxing on the lawn with a picnic.
This week’s meal plan is filled with weeknight favorites and a few new recipes that look delicious and easy. (like this Blueberry Smoothie, it fit both requirements) It’s going to be a trial and error for awhile while we find our groove, but I’m excited to be back to a regular routine!
Here’s this week’s meal plan:
Blueberry Muffin Smoothies (with spinach added) or Freezer Breakfast Burritos (I made a big batch yesterday)
Leftovers, sandwiches or this chickpea salad
Watermelon, Apples, String Cheese, Greek Yogurt or Almonds
Sunday-Going over to my Aunt & Uncle’s for pool time and dinner
Monday-Pesto Chicken & Summer Squash Skewers and rice pilaf
Tuesday-Easy Roasted Chickpea Tacos
Wednesday-Soy Dijon Pork Tenderloin with sweet potatoes and a salad
Friday- Pizza at our monthly church marriage group meeting
Saturday- Wing it/Out
-Make a batch of breakfast burritos
-Cut up watermelon
