Meal Plan 6/29-7/5

Good Morning!


It has been a perfect summer weekend! Friday night I hosted a Julia Child themed book club at our house, which was a blast. The ladies brought a variety of French food and went all out- macaroons, twice baked potatoes and stuffed mushrooms were served! Yesterday I tried Standup Paddle Boarding for the first time and then spent the day out on our friends boat. In a few minutes I’m heading to the grocery store, but we have no other plans today besides resting!

This week is looking like the calm before the storm, so I’m using the opportunity to try a few new recipes and use up a few of the pre made things in our freezer to have a bit of a beak.

Here’s this week’s meal plan!

Fruit & Yogurt, Eggs or Green Smoothies

Leftovers & this Summer Chickpea Salad

Sunday- Grilled Chicken Bruschetta over Whole Wheat Pasta
Monday- Farmer’s Market Veggie Burgers from the freezer and roasted zucchini & yellow squash
Tuesday- Grilled Rosemary Lamb Chops with Asparagus and Rice Pilaf
Wednesday- Crock Pot Enchiladas (made with turkey and green enchilada sauce…never made this last week)
Thursday-Salmon Burgers from the freezer and Roasted Broccoli
Friday-Grilling for the Fourth!
Saturday-Wing it

  1. Um, I want to devour all of that food in the photo… particularly the Honey Goat Gouda <3 YUM! I have no idea what I'm going to make this week, but I want some chickpeas, brown rice, and butter beans in there somewhere!

  2. Mmm that honey goat gouda sounds amazing! This weekend we headed out to the lake but had to return a day early because it rained the entire time!!

  3. It does sound like you had a great weekend – I’m jealous of the boat! Per the usual, my meal plan is up in the air this week. I am proud of myself for washing all of my fruit and boiling eggs for the week though, haha… I have chicken breast and ground beef so I see lots of grilling in our future!
