It’s been a pretty non-eventful weekend and I’m happy about that. Last night Rich and I hung out at home after his Rugby game, carried out some Chipotle and enjoyed a few beers from Three Floyd‘s that he picked up at the brewery on his way home from the game.
Since I’ll be home to cook dinner all week, I’m taking advantage and trying a few new recipes. Hopefully my days of being unemployed will be numbered and this will be short lived, so I plan to enjoy it while I can!
Here’s this week’s meal plan:
Lunch: Leftovers, Salads, Italian Tuna Salad (never made this last week)
Snacks: Fruit, Smoothies, Greek Yogurt, Popcorn and most likely a batch of Buffalo Roasted Chickpeas
Sunday- Steak, Mushrooms and Garlic Mashed Cauliflower
Monday- Pork Chops with Brown Rice and Green Beans
Tuesday- Chicken and Asparagus Lemon Stir-Fry with Brown Rice
Wednesday- Leftovers/Freezer Stash
Thursday- Hummus Crusted Chicken
Friday- Cauliflower Crust Pizza
