After a night celebrating St. Patrick’s Day at an Irish wedding, needless to say today is going to be a lazy day. I’ve got corned beef going in the crock pot and Rich and I will be retiring to the couch soon for a movie marathon.
This week is going to be a busy one, so I’m glad that we have zero plans today besides taking Penny to Obedience class. Monday we’re taking advantage of Chicago Chef Week and Rich is meeting me after work for dinner. The rest of the week will be a wing it situation, as Rich has Rugby practice and is taking another certification class for public safety. I could use a few “throw together a quick dinner” nights as those are usually oddly satisfying. And, I have to admit, I’m kind of burnt out with meal planning so I’m excited to try Relished at the end of the week.
So, here’s this week’s plan!
Breakfast: Avocado Toast, PB & Banana Toast and Breakfast Burritos from the freezer (still have a lot from the beginning of the month)
Lunch: Tuna or turkey snack plates, leftovers
Snacks: Apples, Oranges, Turkey Jerky, Wasabi Seaweed Snacks, Dried Fruit, hard boiled eggs and LARABARs (our pantry is still stocked)
Sunday- Crock Pot Corned Beef & Cabbage and Whole Wheat Irish Soda Bread Muffins
Monday- Out to Tanta
Tuesday- Rich has practice, so it’s quick meals: Chicken Cesar Salads, Egg Sandwiches or use our freezer stock
Wednesday- same as Tuesday
Thursday- same as Wednesday
Friday- Relished Meal #1 (thanks, Kit for the promo code!)
Saturday-Relished Meal #2
-Make Corned Beef in Crock Pot
-Make Shredded Chicken in Crock Pot to have on hand for quick dinners (recipe: put chicken breasts in crock pot, cover with chicken broth and cook for 4 hours on high or 8 hours on low, shred and enjoy all week!)
-Make Soda Bread Muffins (hopefully going to have these on hand for breakfast too!)
-Hard Boil Eggs (I enjoyed having these on hand last week to fill in the gaps when I needed to pack some protein into my lunch)
