Meal Plan 10/27-11/2

Well, no workout recap this week since my cold knocked me on my butt. I made it to one yoga class and went on a 2 mile run yesterday plus an arm and core YouTube video and that was my week. My weekend was pretty lame and exactly what I needed: lots of sleep, some errand running and not much else. But, we did make mussels last night! They were a success and I’ll be sharing the recipe later this week.

Here’s this week’s meal plan:

Since it’s the last week of the month, this plan is pretty simple. Most of these meals are based on things we had on hand, like some frozen Naan in the freezer, 1/2 block of mozzarella cheese and 1/2 container of ricotta cheese. You get the picture…

Saturday-Practice Thanksgiving Turkey

  3. I’m with Irina – mussels are something that seem so gourmet to me and I have always been intimidated by the thought of making them at home. Can’t wait to hear more details on your recipe! And isn’t this cold weather just BEGGING for home-cooked casseroles, stews, and slow-cooker soups and things? YUM!

    • We were totally the same way. Even while the mussels were in the pot, Rich and I kept saying how nervous we were that they wouldn’t turn out. But, it ended up being REALLY simple!
