Lately, I’ve been loving all things Fall! Here are some of my favorite Fall eats lately.
For breakfast, I’ve been enjoying anything easy, warm and comforting. My Honeycrisp Oatmeal Bake has been perfect to have on hand and keeping DIY Frozen Breakfast Burritos in our freezer has been clutch. I’ve also enjoyed the occasional Bagel Friday (or any other day) because I crave them and like to treat myself when the craving hits.
Lunches lately have been soup. So far this season I’ve made Powder Keg Chili, Harvest Chicken Quinoa Soup and this week I had Restaurant Style Tortilla Soup. I have a shortlist of soups I want to make in the near future including Pioneer Woman’s Carrot Thyme Soup and How Sweet Eats’ White Chicken Quinoa Chili. Yum. I love soup in cooler weather and never get sick of it!
Dinners lately have been a mix of old favorites and new recipes. Last night we tried this Creamy Artichoke Pasta for Two and loved it. We also added capers. (looove capers in anything)
Last but not least, snacks! I’m a firm believer in an afternoon snack and I like to have mine at 4:00pm on the dot every afternoon. This keeps me from getting hangry on my way home from work. My favorite snacks lately have been Honeycrisp apples, pistacchios and Quest bars (Chocolate Chip Cookie Dough are my fave).
