Meal Plan 8/18-8/24

It’s been a pretty fabulous Sunday! This morning, I completed my first open water swim with Kelly and Lauren! After the swim, we had brunch at Yolk.Β and ate our meals family style. Our favorite part was the Red Velvet french toast, which was to die for!

The rest of my day has been pretty low key- I prepped some food for the week, worked on some blog posts for later this week and am now gearing up to make some ribs for dinner!

Now, for my meal plan for the week!

Breakfast
Easy Oatmeal Bake made with fresh raspberries and blueberries (it was so good last time, so we’re bringing it back)

Lunch
Quinoa Tabbouleh with Hummus and Pita Bread
Leftovers

Snacks
Yogurt and Fruit
Hard boiled eggs

Dinner
Sunday- Spareribs with corn and roasted red potatoes
Monday- Easy Roasted Chickpea Tacos
Tuesday- Buffalo Chicken Burger Salads
Wednesday- I have a business dinner, so I’ll make sure there will be some leftovers for Rich :)
Thursday- Anne’s Sasusagefest Fundraiser!
Friday- Chili Lime Shrimp Bowls with Black Bean and Mango Salsa
Saturday- Out/Wing it

Food Prep
Marinade Chickpeas
Make Oatmeal Bake
Hard boil eggs for snacks
Make tabbouleh

  2. That oatmeal bake looks DELISH and I think have all the ingredients! And the red velvet french toast?! YUMMM! (I’m all about breakfast foods lately for some reason!)

    • That’s one of the reasons I love thus recipe, I always have the ingredients on hand and you can use whatever you have on hand for mix ins!!!

  3. What time were you out this morning? I was at Ohio St beach around noon and then headed to D4 (near Yolk) for lunch.
