Meal Plan 2/10-2/16

This weekend I’ve slowly returned to the outside world, including a great date night last night with my hubby! We started our meal with caviar potato chips. It was a very unique combination! Today is day ten of the Intuitive Eating Challenge and I’m really learning a lot. While I was a home this week, I ate whatever I want and listened to my hunger. I am happy to say that I maintained my weight while sitting on the couch. :)

This morning, I returned to yoga and it felt amazing. I have to admit, I was very tight but I am glad I am able to work out again. I’m very anxious to return to the office than ever and so grateful for the week at home to rest. Although, I definitely thrive in routine so I’m excited to return to mine!

Here’s my meal plan for this week:

Breakfast
Easy Oatmeal Bake
Hard Boiled Eggs

Lunch
Harvest Chicken Quinoa Soup
Salads

Snacks
Fruit, mini popcorn bags, Larabars

Dinner
Sunday: Italian Pork Tenderloin with Roasted Sweet Potatoes
Monday: Greek Stuffed Chicken Breasts with Lemon Orzo
Tuesday and Wednesday: Leftovers/Wing it
Friday: Out for a friends’ Birthday
Saturday: Out at our friends’ wedding

Sunday Meal Prep
-Make Oatmeal Bake
-Hard Boil Eggs
-Make Soup
-Assemble Salads in Ball jars
-Cook Chicken (making today, tomorrow I will just warm up)
-Cook Pork Tenderloin for dinner

  1. I like that you meal prep one day of the week to get ready for a week of good eats. Sounds like a good week of meals to me, especially the pork and sweet potatoes. Mmm! That’s great that you maintained even while you were sick. I feel like I always gain when I’m sick. Lucky!

    • This system is definitely working for me! With my commute, cooking dinner is difficult so I’ve learned that having something on hand to heat up is best!
